 ¼ tsp onion powder
 ¼ tsp salt
 ¼ tsp black pepper
For the BBQ Sauce
½ cup barbecue sauce (store-bought or homemade)
 1 tbsp apple cider vinegar
1 tsp maple syrup or honey (optional, for sweetness)
¼ tsp smoked paprika (for extra depth)
For Serving
4 hamburger buns or sandwich rolls
 Coleslaw (optional, for topping)
 Pickles or sliced onions (optional)
1

  • Prepare the Mushrooms:

    • Gently shred the Lion’s Mane mushrooms into pieces resembling pulled meat.

2

  • Season and Sauté:

    • Heat olive oil in a skillet over medium heat.

    • Add the shredded mushrooms and cook for 5–7 minutes, stirring occasionally, until they release their moisture and begin to brown.

    • Sprinkle with smoked paprika, garlic powder, onion powder, salt, and pepper. Stir to coat evenly.

3

  • Make the BBQ Sauce:

    • In a small bowl, mix the barbecue sauce, apple cider vinegar, maple syrup, and smoked paprika. Adjust sweetness and smokiness to your taste.

4

  • Combine and Simmer:

    • Pour the BBQ sauce into the skillet with the mushrooms. Stir well to coat.

    • Reduce heat to low and let simmer for 10 minutes, allowing the mushrooms to absorb the sauce.

5

  • Assemble the Burgers:

    • Toast the hamburger buns or sandwich rolls if desired.

    • Spoon the BBQ Lion’s Mane mushrooms onto the buns.

    • Top with coleslaw, pickles, or onions for added crunch and flavour.

6

  • Serve and Enjoy:

    • Serve immediately with your favourite sides, such as potato salad or chips.
